Juicing

I personally love juicing. I wish I could honestly tell you that it is part of my daily routine and that we have incorporated juicing into our daily lives. But that would not necessarily be the truth.  I go through juicing phases.  I juice for a month or so, then I don’t do it for a couple of weeks, then I am back at it. I do know that when we are all juicing, we all just feel better. It is a personal goal of mine to make juicing an integral part of our daily lives.

Juicing is a great way to get your daily recommended servings of fruits and vegetables. My kids love when I make juice and am able to sneak in all kinds of vegetables without them even knowing it. Beets are a fantastic way to hide the offending green and sweeten up the juice, so nobody suspects that there is a single vegetable in the juice. It is a great way to get them involved in the kitchen, and it is super easy and fun for everyone.

The benefits of juicing are immediate. Juicing raw fruits and vegetables gives your body a power packed dose of vitamins and minerals, which can be lost or reduced when you cook them. Another benefit of juicing is that you can toss in vegetables and fruits that you or your family would not ordinarily eat.

I use a high powered blender that does not extract the fibers. Some people do not like the fibers and use machines to extract them. That is a personal choice and entirely up to the individual. I have used both and just prefer the pulp. You do not need any fancy equipment or snazzy juice extractors to make juice, all you need is a blender. Depending on your equipment you should chop food according to the manufacturers recommendations.

Fiber is essential in our daily diet. If you are worried about getting enough fiber there are some great fiber supplements that are gluten free and can be added to your morning juice. There are also protein powders and other boosters that you can toss into your juice.

I typically stick to organic fruits and vegetables when juicing, because I leave the rinds and skins on. The skin and rind are where a lot of the nutrients are stored. Be sure to wash them thoroughly before using. It is best to make only the amount of juice you can consume within the same day. I only make enough for one to two servings at a time. If you are storing juice, the recommended shelf life is 24-72 hours. Try using glass instead of plastic to store the juice. Plastic speeds up the oxidation process in the juice. Mason jars are a great option for storing juice.

One other side benefit of juicing is when I have fruits or vegetables that I do not think I will use and might be wasted, I store them in the freezer and use them in my juices. It is a great way to save money.
