Family Valentine’s Day Celebrations

When my children were young, Valentine’s Day became a family celebration. We would decorate with pink and red paper decorations, make dinner and dessert and eat on a big blanket in the middle of the living room floor while we watched movies.

Those memories are some of my favorite Valentine memories.

The desserts we made were the things that they loved most and ones that they could help me make. Puffed rice and marshmallow treats and sprinkle and chocolate covered pretzels are simple and delicious. We used cookie cutters to cut the marshmallow treats and lots and lots of chocolate and sprinkles for the pretzels.

Being gluten free hasn’t changed anything. We still chocolate dip pretzels and we still make puffed rice marshmallow treats, we just make them with gluten free ingredients. And we still put a blanket in the middle of the living room floor and watch movies.

Puffed Rice Marshmallow Treats:
Melt 3- 4 tablespoons of butter in a large microwaveable bowl. Add 4 1/2+ cups of gluten free mini marshmallows to the bowl and stir until the marshmallows melt. I say 4 1/2+ cups because the kids did the measuring and pouring, it was never just 4 1/2 cups. They always turned out fine, sometimes they were just a little chewier. We add a few drops of red food coloring to turn the treats pink. Once the marshmallows are melted, add 6 cups of gluten free puffed rice cereal. Mix until everything is well blended. In a parchment covered 9×13, press the marshmallow treats firmly into the pan. Chill until firm. Cut into desired shapes and serve.

Chocolate Covered Pretzels:
In a microwaveable safe bowl, melt a small amount of either white or semi-sweet chocolate, 30 seconds at a time. Remove from microwave and stir. Repeat until chocolate is melted. Add 1/4 teaspoon of olive oil or any neutral flavored oil. Stir. If letting children dip pretzels, allow the chocolate to cool a bit. Dip 1/2 of the pretzels into chocolate, shake off excess chocolate and dip into sprinkles or sugar. Place on wax paper to dry.
