Summer, Barbecues and Cross Contamination

There is something magical that happens when Summer finally decides to show up with her long days and warm nights. Everything is a little more relaxed, everyone comes out of their houses, and the air is filled with the smell of grilling meat.

For those who are gluten free, it is important to remain vigilant. Even when grills are heated to very high temperatures, buns, sauces and marinades can leave behind gluten and utensils can be used from one dish to another.

Whether you are hosting or attending a cook out, you can relax and enjoy yourself by following a few simple guidelines that ensure your safety from cross contamination.

-Aluminum foil is your best friend. Cooking on clean foil placed on a grill will ensure that there is no contamination from the grill grates. Use a clean piece of foil to set gluten free grilling utensils on while cooking.

-Separate utensils are a must – both for the grill and side dishes. If you are hosting or attending a mixed gluten/gluten free cook out, it is necessary to have separate serving utensils used for gluten/gluten free dishes. A quick shout out by the host to all attendees should be enough to save you from any agony later.

-Offer to man the grill or be the grill assistant. Nothing will give you more peace of mind than knowing how everything is being cooked with proper utensils. You will be helping out your host as well as being able to eat without worry.

-Know that it is not rude to serve yourself first. When the host announces that dinner is served, do not wait until everyone else has gone through the line and macaroni has been mixed in with the potato salad. Serve yourself first or offer to help Grandma get her plate and get seated and then serve yourself.

-Use condiments in squeeze containers. If you are hosting, use condiments in squeeze containers to avoid cross contamination from silverware. If you are attending a cook out that are not using squeeze containers, talk to your host to determine if there has already been cross contamination. If the containers are new, try to get to them first. Remember, when in doubt, leave it out.

-Have a conversation with your host. No host wants you to become ill from attending their cook out. If they are not familiar with your situation, explain it to them. If they are concerned about being able to keep you safe, offer to bring a dish or bring your own food. Find out what they will be serving and bring the same for yourself so you don’t feel left out.
